  • 250g/9oz dried spaghetti
  • 75ml/3fl oz extra virgin olive oil
  • 4 garlic cloves, crushed
  • 1 small fresh red chilli, seeded and finely chopped
  • 6 tablespoons chopped fresh flat-leaf parsley
  • Cook the pasta in a large pan of salted boiling water until al dente.
  • Meanwhile, heat the olive oil over a gentle heat, and sauté the garlic and chilli for about 3 minutes until the garlic turns lightly golden.
  • Remove from the heat and pour over the drained cooked pasta, and mix in the parsley. Serve hot.
