  • 225g/8oz ready-to-eat dried apricots
  • 300ml/10fl oz unsweetened orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 3 teaspoon clear honey
  • 1 tablespoon powdered gelatine
  • 4 tablespoons boiling water
  • Put the apricots in a saucepan and pour in the orange juice. Bring to the boil, cover and simmer for 15 to 20 minutes until the apricots are plump and soft. Leave to cool for 10 minutes.
  • Transfer the mixture to a blender or food processor, and purée until smooth. Stir in the lemon juice and add the honey. Pour the mixture into a measuring jug, and make up to 600ml/1pt with cold water.
  • Dissolve the gelatine in the boiling water, and pour into the apricot mixture. Stir to mix completely.
  • Pour the mixture into four individual 150ml/5fl oz moulds. Leave to chill until set before serving.
