Chocolate banana sundae

  • 50g/2oz dark chocolate (at least 70% cocoa solids), broken into small pieces
  • 100g/4oz golden syrup
  • 15g/1⁄2 oz butter
  • 1 tablespoon rum
  • 150ml/5fl oz double cream
  • 12 scoops vanilla ice cream
  • 4 bananas, sliced, tossed in a little lemon juice
  • 75g/3oz flaked almonds, toasted
  • Put the chocolate in a heatproof bowl with the syrup and butter. Heat over a pan of simmering water until melted, stirring until well combined. Remove the bowl from the heat, and stir in the rum.
  • Whip the cream until just holding its shape. Put a scoop of vanilla ice cream in the bottom of each of four tall sundae glasses. Top with the sliced banana, some chocolate sauce and a sprinkling of nuts.
  • Repeat the layers, finishing with a generous dollop of cream.
