Ingredients
Cut the pineapple lengthways into quarters. Remove the hard core.
Loosen the flesh on each wedge by sliding a knife between the flesh and the skin. Cut the flesh into slices, leaving it on the skin.
Using a sharp-pointed knife, remove a few shreds of zest from the lime. Squeeze out the juice.
Sprinkle the pineapple with the lime juice and zest, sugar and allspice. Chill for 1 hour and serve.
