  • 100ml/3 1⁄2fl oz tablespoons oil
  • 2 teaspoons dried red chilli flakes
  • 4 garlic cloves, crushed
  • 1 teaspoon salt
  • 900g/2lb medium raw prawns, peeled and deveined
  • 75g/3oz butter
  • 50ml/2fl oz freshly squeezed lemon juice
  • Put the oil, chilli flakes, garlic and salt in a large glass bowl and mix well. Stir the prawns into the oil and chilli mixture, cover and refrigerate for 3 hours, stirring and turning occasionally.
  • Preheat the grill to very hot. Put the prawns in a single layer on a baking tray, and brush with any of the remaining oil and chilli mixture. Grill for about 5 minutes until tender.
  • Melt the butter with the lemon juice in a small pan, and pour into a serving jug.
  • Serve the prawns hot, drizzled with the lemon butter, with boiled rice.
