Heat the butter in a heavy pan. Add the sugar and stir over a low heat, without boiling, until the sugar has dissolved.

Increase the heat and simmer without boiling for 3 minutes or until golden. Remove from the heat and allow to cool slightly.

Layer the caramel sauce with the vanilla ice cream into four tall parfait glasses. Serve immediately.
